We have created our own gluten-free flour mix, by combining high- protein gluten-free bean flours, rice flours and other nutritious grains.
Spelt is a grain that is higher in protein and lower in gluten than wheat, is still considered an ancient grain, and is grown organically in our area by Amish farmers.
